I cannot answer your question directly, but would have thought that the FFPLUM website would be the first place to start. Only problem is that my French is not good enough to understand everything on their site.
Hope this helps.

The FFPLUM (French Ultralight federation) is indeed the first place to seek the kind information you need.

This is the direct link to the « UL flight instructors initial training » :

You may also find all relevant details regarding the approved UL training centers here on the DGAC (French CAA) website :

Good luck with your training !

Were you planning on making money out of this? I instruct on multiaxes, in French, for the french licence. It's great fun but it's not a way to make your fortune. If you do want to go for it, budget for buying and maintaining your aircraft, as salaried work is rare and not that well paid. Remember, the French are strong on the flying CLUB culture as opposed to flying school environment. And yes, all of it,every last word is in french. No english at all. Not trying to put you off, just the way it is.
